Like the title says, what are these grey bars and how do I turn them off? Thanks for your help!

I only see them on time frames less than 1 day; ie 4 hours, etc

Go to Style - Settings - Equities tab - uncheck Highlight Extended-Hours Trading session

That is if he is on equities. If you are trading futures go to the little wrench tab to the left of the time frame button, hit on futures and uncheck highlight extended hours.

You can use that wrench for equities as well.

I personally like the extended hours charted with a white chart.
I don't know how any one trades with these dark backgrounds.
