So sushi from California like the California roll should be eaten in California because it was originally from California.
Don't eat Mexican east of the Mississippi or north of the red River.
As long as the sushi is created well and respected I usually enjoy it.
I would love to eat sushi in Tokyo.

Japanese nowadays eat tons of conveyor sushi.
Almost unthinkable in times gone by, now it's the standard.

I've had pretty good Mexican here, granted a lot of Mexicans have come here straight from Mexico. The only thing different is perhaps the fresh produce. The recipes don't change.

Playing Russian Roulette with this I think. Buffet sushi too. You're going to get food poisoning eventually. Gotta have them make it fresh on the spot.

With conveyor sushi you want to be seated at the head of the counter, where the conveyor comes out of the kitchen.
Then you watch the line for a minute or two to see what has been circulating, then when new stuff comes out you jump on it.
Or else just do a custom order from the touch panel.

There's this lovely place in Tokyo where you eat standing and they make whatever you want in front of you - food is amazingly tasty.
If you're a foreigner the chefs bet between them on what you're going to order next

Small buffet here in Texas. $15 all you can eat. I have sat here and ate just sushi before. They have a sushi chef from Japan that makes the rolls on the buffet. He is a really nice guy.
