Who will declare it stable? NT? they will couch everything with disclaimers such as the above.
It is not like: This thing is dangerous and should not be used by anyone (ala South Park):
or: There is a risk of blowing up your account if you use this product. Seriously!
I say it is stable enough to sim.
Hope to find out Sunday when I will be trading the 6e how it acts with a real $$$ trade.
But Most Importantly: I will call my Broker's Trade Desk 1st to see if they are open and how long it takes for them to answer my call. (Have your account number in hand if you try this).

Though this is my first post, I dare say I have used NT7 (Live & sim) since Feb w/o any issues. It is as if it was 6.5 but with a much improved charting template. However, be careful with trailing stops in volatile markets. Either keep them a safe distance from your target/s, should it be filled, or make sure you are sitting at your desk.
I would say NT 7 is safe with one important caveat: do not attempt to change your chart settings on any chart you have open while you have a live trade on. This is especially true if you are using non-minute (e.g., range, renko, P&F, etc.) charts or multi-timeframe charts.
In my experience, as a range/renko guy, approximately half the time I change my chart settings in NT 7, the chart crashes and the system freezes up. I have to close NT by killing the process. There is no way to close a trade when this happens until you restart the system. Also, I only have one or two indicators and only 3 days of data at any given time. There are others on the NT site that report similar problems with NT7.
I have held off for various reasons in trading live with NT7 Beta 16, but have only had problems a few betas ago when about the same thing as mentioned above happened to me.
I called the desk to place a stop loss and stop limit (One Cancels theOother) just in case. Before the order was place my system was back up and just exited right away. I then had my broker give me a trial so I could run the DOM on the 2nd computer. That has now expired and my computers are linked again. I really, really hope to make a live trade when the 6e reopens.
