what is the difference in trading using the uptickdowntick or bid/ask?

Here a general rule of thumb.

If your market data feed does not include Bid and Ask then use uptick / downtick.

Bid and Ask are seen as a stronger signal so if both are available use Bid / Ask and ignore uptick / downtick.
