field greens, baby spinach, cucumber, walnuts, almonds, cherries, Anaheim Chiles, tomato, basil, gorgonzola cheese, cilantro, pepper, and just a small amount of dressing. Sometimes I add different things or subtract some.
The vegetable portion probably fills 2.5 to 3 normal bowls in one ridiculous mixing bowl I eat out of but I still feel hungry afterwards. I tried adding some meat with beans but I still have the same problem. Sometimes I feel like I'm eating ridiculous size portions. Seems to be not until I have carbs and/or some form of fat do I feel full / satisfied. I've heard some good carbs to add are sweet potato, oat meal, or wheat/pumpernickel bread to the vegetables.
I was wondering if that's normal to remain hungry or If I should add carbs to my salad. I'm curious what other people do when they start to add large portions of vegetables to their diet. At the moment I'm eating two meals a day that consist primarily of vegetables. Before this diet I was primarily eating meat and carbs together in almost every meal, pretty much the typical american diet. I guess I just find it abnormal with how much vegetables or protein I can eat without feeling full.

Add a generous amount of beans, barley, quinoa, lentils, peas, or some combination thereof to the salad to get some low glycemic calories. The caloric content of salad greens is very low, too low for a satisfying meal. Even a huge bowl of leaves, while rich in nutrients, won't give you much fuel to burn. There is a whole world of bean varieties out there to explore. Try mung beans.
Best to make your own dressings using high quality olive oil. Commercial dressings are made with omega 6 oils like canola that promote systemic inflammation. Be careful, lots of olive oil is mislabeled and adulterated.
Eat more sweet potatoes. Prepare by boiling in water, and DO eat the skin.
Beets are good in salads, too.

also don't forget that your body needs time to get used to his new diet. It is only natural that after years of meat and carb - loaded meals, this is exactly what your body is screaming for in order to get some satisfaction.
Same with eating schedules - if one goes from 5 to 2 meals a day (or vice versa) it will take days or even weeks until the body stops yelling for his "usual" routine.
IF it turns out that you changed both diet AND the number of meals per day, I suggest adding good meals again to the prior level - that should help a great deal with both intake and usage of nutrition as well as the hunger feeling..

PPS: in addition to @Zondor 's suggested list, you could add brown rice (or a mix of brown & white rice) too.
Most rice is unsafe due to heavy metal contamination. Arsenic, cadmium, etc, mostly from human caused pollution, but not always. For example, in Bengladesh there is a lot of arsenic naturally present in ground water.
In the US lots of arsenic from pesticides applied to former cotton fields and from manure of chickens that have been fed arsenic, FDA Approved!®, to make them grow faster and have that nice pink color.
I have been taking my chances with black rice from Thailand... who knows if it is safe.
Every year it gets harder to avoid these cascading dangers. This is at best a holding action. We are doomed.

My concept is: people need to be pro-active with their health: enviromentally, body and mind.
Thought I would share how to level the playing field with Arsenic and toxins being in our food.
1. Have a good water purification system in your home. I have used a Reverse Osmosis System for years, there are some that even put the minerals back into your water. They will pull out a lot of stuff, we do not want in our bodies.

2. Do not drink water from plastic bottles, they emit something from the plastic that does not support good health. If I am on the go, just fill a glass jar with your purified water and take it with you.

Omega eggs, nuts, olive oil, salads with meat is pretty much what I live on too plus organic sweet potatoes if I am hungry and didn't eat enough that day or to keep out of ketosis. Anything past that I treat as a cheat meal.
I only buy organic sweet potatoes because they cost like 20 cents extra and taste awesome. The fact they are "organic" really doesn't mean much to me.
If I buy rice, I over eat it. There is just no way around that for me so I don't bother.
Itchymoku, I think you should add other meals and also try to figure out what the calorie count on your salad is. When you start eating less caloric dense food it is easy to not eat enough. The fact the volume of food is big doesn't mean much.
Biggest thing of all though is to be properly hydrated. If you get use to a month of being properly hydrated you will never go back to the state of dehydration most people live in.
As a general heuristic my brain shuts down when someone with Rachel's mindset starts talking.
